I love Kneader's pumpkin bread. For those of you who have never had their pumpkin bread, it is moist and SO YUMMY! I have been looking for a recipe that is similar so I can make my own. I think I found one for muffins that is comparable. For anyone that likes pumpkin bread, here's the recipe:
Spiced Pumpkin Muffins
2 cups flour
2/3 cup packed brown sugar
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon baking soda
1/4 teaspoon ginger
1/2 cup butter
1 cup 100% canned pumpkin
2 eggs
1/3 cup buttermilk (if you don't have buttermilk, use regular milk but add 1 T of lemon juice to it)
Combine dry ingredients in one bowl and combine liquids in another. Add liquid mixture to flour mixture until moistened. Fill muffin tins. Bake at 400° F for 15 to 20 minutes. Enjoy!
